Fazenda Guariroba represents Brazilian coffee domestically and internationally through the recognition obtained with awards as one of the best natural coffees produced in Brazil, under the management of Gabriel Lamounier Vieira, Elisa Paiva Lamounier and Marilia Aguiar Paiva. They carried out remarkable and professional work in specialty coffee production, Planting outstanding coffee varieties and investing in the post-harvesting process and won the first prize of the 2016 Cup of Excellence.

The coffee cherries used in this process are carefully selected, focusing on those with a sugar content of 25 Brix or above. After being harvested, the cherries undergo a hydraulic selection process, where they are soaked in water for 1 hour.

Next, the cherries go through a 72-hour Carbonic Maceration (CM) process using Mossto. During the first CM, the cherries are exposed to Mossto, allowing for fermentation and flavor development. Afterward, the cherries are depulped and subjected to a second 72-hour CM with fresh Mossto.

The Mossto used in the process is inoculated with Galaxy Hops, adding unique flavor characteristics to the coffee. Following the fermentation process, the coffee beans are sun-dried on African beds for 25 days, ensuring optimal moisture levels of 10.5%.

Through this meticulous process, the coffee beans acquire distinct flavors and aromas, resulting in a truly exceptional coffee experience.
